I couldn’t wait to share this easy chocolate mug cake with members of a 56 Days Facebook group that I manage the other night after it turned out so yummy. Sometimes a girl just needs a little sweet treat, but you just don’t have the time to make something too elaborate in the kitchen–let me tell you, this easy chocolate mug treat fit the bill!!
After looking online for a mug cake recipe, I decided to modify this just a bit based on the ingredients I had in the house and it DID NOT DISAPPOINT. Next time (and there will definitely be a next time–maybe tonight), I’ll make a sugar free whipped topping to go along with this yummy, single serve dessert–so easy and so good but again, gotta have the ingredients.
So what makes this easy chocolate mug cake so perfect?

Easy Chocolate Mug Cake
2 tbsp. liquid coconut oil
1/4 c. blanched almond flour
Light sprinkle of pink himalayan salt
You’ll need a 12 ounce mug for this mug cake. Add your oil and egg to the mug and mix well. Next, add all the remaining ingredients (NOT the strawberries–those go on at the end to make this dessert pretty). Mix well. Place mug in the microwave and heat on high for 1 minute. Remove to check for doneness–the cake is done but if you like it a little less gooey, microwave on the save temperature for an additional 20 seconds. Finally, take a sharp knife and run around the inside of the mug for easy removal. Finally, slide your cake onto a serving plate.
