Easy Thanksgiving Stuffing

Ingredients

  • 1 Bag of Pepperidge Farms Stuffing
  • 3 cups water
  • 1 medium onion chopped
  • 3 or 4 celery ribs diced
  • 1 stick butter

Instructions

  • Bring water to boil. Add onion, celery, and butter and simmer until onion and celery softens.
  • Add enough stuffing mix for a nice consistency and place in a casserole dish.

Simple Sweet Potato Casserole

Ingredients

  • 3 c. Mashed sweet potatoes 2 1/2 lb or 24 oz. can
  • 1 c. Sugar
  • 1 Stick butter
  • 1 Tsp. Vanilla
  • 2 Eggs
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 c. Coconut
  • 1 c. Brown Sugar
  • 1/3 c. Self-rising flour
  • 1 c. Chopped pecans

Instructions

  • Mix the mashed sweet potatoes, sugar, 1/2 stick butter, vanilla, eggs, salt, cinnamon, and nutmeg and put in greased 2 qt. baking dish
  • Mix the coconut, brown sugar, self-rising flour, 1/2 stick softened butter and chopped pecans together
  • Press topping mixture on top of the potato mixture
  • Bake at 300 degrees for 35 minutes

Easy Whole Cranberry & Pineapple Sauce

Ingredients

  • 14 oz. Can of Ocean Spray Whole Berry Cranberry Sauce
  • 8 oz. can of Crushed Pineapple
  • 1 Cup of Chopped Walnuts

Instructions

  • Drain crushed pineapple
  • Mix all ingredients in a medium-sized bowl
  • Cover & refrigerate for several hours before serving

Easy Corn Pudding

Ingredients

  • 1 box Jiffy corn mix
  • 1 can cream corn
  • 1 can fiesta corn not drained
  • 1 stick melted butter
  • 8 oz sour cream

Instructions

  • Mix all ingredients together in a medium-sized bowl
  • Bake at 375 degrees for 1 hour
  • Enjoy!

Simple 7-Layer Salad

Ingredients

  • 1 head lettuce
  • 2 or 3 stalks of celery
  • 2 medium green peppers
  • 1/2 cup red onion
  • 16 oz. can green peas drained
  • 2 T. Sugar
  • 1 1/2 cup mayonnaise
  • Grated cheese for topping before serving
  • Bacon bits for topping before serving

Instructions

  • Chop paper-thin
  • Place in a bowl in order given. Do not mix.
  • Leave 5-6 hours, or overnight if possible.
  • Add grated cheese and bacon bits just before serving

Easy Chocolate Oatmeal Cookies

Ingredients

  • 2 cups of sugar
  • 1 stick margarine
  • 1/2 cup milk
  • 3 tablespoons cocoa
  • 1/4 cup chopped nuts
  • 1/2 cup peanut butter
  • 3 cups quick-cooking oats
  • 2 teaspoons vanilla

Instructions

  • Cook sugar, milk, margarine and cocoa 1 1/2 minutes. Start counting time when mixture has reached a full rolling boil.
  • Remove from heat and add oats and other ingredients
  • Beat well until blended
  • Spoon onto wax paper about 1 1/2 inch diameter
  • Cool
  • Eat
